Kopi Luwak (or civet coffee) is coffee made from coffee beans that have been eaten by the Asian palm civet and other related civets, then passed through their digestive tracts. Civets eat the coffee cherries for their pulp. In their stomachs, proteolytic enzymes penetrate the beans, producing shorter peptides and more free amino acids. After passing through the civet's intestines, the coffee beans are excreted in the feces, retaining their shape. After being collected, thoroughly washed, sun-dried, lightly roasted, and brewed, these beans produce an aromatic coffee with a significantly less bitter flavor, widely known as the world's most expensive coffee. Kopi luwak is the world’s most expensive coffee. The main factor of it’s high price is the uncommon method of producing such a coffee.
